    Most Incredible Protein Pancakes, Ever

    I can’t count the times I’ve tried to reinvent the protein pancake. From cottage cheese to sweet potato, I’ve done it all.  When Kodiak Cakes came out I was immediately a fan! However, if you know me, you know I can’t simply follow a recipe. I also love a good sale, and this particular Sunday I was shopping, Krusteez buttermilk mix was on sale! I assumed I would add my usual ingredients, but the outcome was much more fluffy and delicious than I had thought. I truly believe the difference is the collagen peptide and flax seeds. 

     

     

    Ingredients: 

    • 1 box Krusteeze Buttermilk Protein Pancake mix

    • 1 cup Almond milk, unsweetened

    • 2 cage free eggs

    • 2 Tbsp flax seeds

    • 1 scoop Life Time Collagen Protein 

     

    Prep: 

    • Mix everything in a bowl

    • Take a 1/3 cup measuring cup to make 24 pancakes

    • Put sets of 3 pancakes in sandwich bags

    • Freeze half and put the rest in the fridge for the week

    • Take out the rest as needed

     

    Makes 24 Pancakes

    Calories per pancake: 98

    Carbs; 14g Fat: 2g Protein: 7g

     

    I love how easy these are to make. Food prep is always something my clients struggle with. This recipe makes it easy to make 8 servings of protein pancakes and you don't have to eat them all in 8 consecutive days. Freezing some and using the others immediately allow you to choose whether or not you want them every day, or just here and there as emergency food. Sometimes I'll grab these for a quick breakfast if I don't have time to make my smoothie in the morning or snag a bag for a pre & post-workout snack.
