If you Pinterest, you know it takes about two seconds to head down a rabbit hole with no return. Because of that-I got here last night!
I was a different two seconds away from eating a dark chocolate bar and I searched for casein cookies on Pinterest. A past client of mine once told me she made them and I joked that I'd just bake crispy chips because I've never had success baking with protein powder. Anyways. Recipe looked easy enough.
So, I tried it. I used my Rule 1 Casein in salted caramel and PB Crave in cookie nookie (not almond butter). I also topped them with a 1/2 square of dark chocolate. Half way through cooking I was STOKED! Check out these babies.
Then, this was the finale.
Right?! What the crap. Beautiful and plump to flat and...well...flat.
Regardless of the flappy look and to my surprise, they were awesome! As awesome as a protein casein cookie can be anyways! The peanut butter definitely adds to the taste. I'm a fan. I know I don't sound too convincing, but I definitely encourage giving it a go if you currently use protein powder.
It must be casein! You do not want to try this with whey protein. You'll notice the casein makes a thicker, paste like consistency; whereas, the whey makes more of a milky, watery consistency.

Specifically, cottage cheese and Greek yogurt have higher amounts of casein. Because of that, they are best eaten before bed as they take longer to digest.
