With Memorial Day upon us, it’s time to pull out all the best summer side dishes! To spend a day at the pool, I must have easy snacks so I don't have to leave! This dip is a perfect side to pack and share!
I remembered years ago having the best version of this, ever, and reached out to have a refresher on the ingredients. The only thing I heard when he listed them was, "MAAAAAH-YOH". Yep, you heard me, MAYO. I thought to myself, "NO-Way-OH". So, I naturally grabbed the Greek yogurt and went to work. Alas, another skinny version of something awesome; which, is still awesome, slimmed down. I made this for a dance party with a few of our friends, and unless they all lied, they loved it. It was gone at the end of the night.
The best part – while the title says ‘100 calories’, it is actually less! One portion of this will only run you 86 calories and is full of protein and fiber!
1 C – nonfat plain Greek yogurt
1/2 - bar reduced fat cream cheese (room temperature)
1/2 C - part skim ricotta cheese
1 packet - McCormick spinach seasoning packet
1 bag of spinach
1/2 vine tomato
1 Hawaiian Round bread loaf or your desired dipping agent (carrots/peppers work great, too!)
Boil spinach in a large pot for 5-7 minutes and drain
Combine all ingredients except tomato & spinach in a large mixing bowl
blend with a hand blender until fully combined and smooth
fold in tomatoes and spinach
Carve out the center of the bread bowl and fill with your mix
