5 Minute Guacamole

I hadn't had guacamole in a while until I received a text from my husband; his sister had requested my recipe for our family Christmas. Eager to deliver, I made my basic throw-it-together recipe and realized it was pretty tasty. After a few comments along the same lines at the party, I decided to share. This is pretty easy; you really can't mess up guacamole!

Ingredients:

  • 5 avocados

  • 3 vine tomatoes

  • 2 jalapeno peppers

  • 3/4 tbsp - cumin

  • 1/2 tbsp - lime juice

  • 1 tsp - salt

  • 1 tsp - onion powder

  • 1 tsp - garlic

  • 1/2 tsp - cayenne pepper

  • 1/2 tsp - red pepper flakes

Preparation:

  • Avocado selection - you want to purchase firm avocados. I like do this and leave them out 2 days at home (that way I know how long they've been sitting to ripen). At that point, they should be very slightly soft, not squishy at all though.

  • Cut the avocado in half and twist the avocado open, exposing the pit.

  • Carefully strike the pit with a knife, it should stick. Twist the pit until it is free from the meat.

  • Using a large spoon, scoop out the meat and place in a large bowl.

  • Using a fork, 'mash' the avocado until it is the consistency you like.

  • Quarter the tomatoes, then cube and transfer to the avocado mixture.

  • De-seed the jalapenos.

  • Dice the jalapenos, add your spices and fold into the avocado mixture.

  • Enjoy your clean, wholesome, healthy fat dip!

I have 1/2 serving daily with chicken for one of my mid-day meals! Although it's "healthy", portion control here is important. You can easily down 500 calories in a heartbeat...Just because it is avocado, doesn't mean the calories don't count!

ALSO - A note on Freezing - omit tomatoes and jalapenos if you intend to freeze. They tend to make it watery post thawing. You can always add them in after! See more on how to bulk freeze avocados and your guacamole in my blog post, HERE.
